Here is a great recipe used by the Waldorf school in London... spice up your life with this delicious tea rub...

For the tea rub:

4 tsp ground pepper

4 tsp chilli pepper

4 tsp packed light or dark brown sugar

2 tsp finely ground Lapsang Souchong (I prefer to double this part and skip the chilli pepper)

'steeped' black tea

2 teaspoons salt

1 tsp paprika




This is what my tea rub looks like:





Other ingredients:


Four 6oz skinless boneless chicken breast halves

2 tsp chicken tea rub

1 tbs olive oil

1 tbs balsamic vinegar




Directions:

Wash and pad the chicken breasts. Mix oil and vinegar and rub into the chicken. Sprinkle chicken with the Tea Rub and allow it to sit for about 10 minutes. Heat a grill pan or BBQ to high. Place the chicken on the top rack to cook it slowly - that way you ensure it is fully cooked. Then place it on the bottom rack and grill the chicken until well browned.
