Rock sugar is traditionally used in Germany to sweeten tea. East Friesland uses it in the famous East Friesen tea. First, a small amount of rock sugar is placed in the cup, then black tea is added. Last, cream is added with a spoon along the side of the cup - this forms a little cloud in the cup. The tea is not stirred. That way, you can enjoy multiple cups of tea with the same kandis.
